Reading data: yes (cached). Creating new shifts/tips/items: requires connection. The app syncs when back online.

Self-hosted Postgres with row-level security. Encrypted backup daily to Cloudflare R2. JWT auth. HTTPS only.

Yes. We collect minimal data (name, email, phone optional). You can request export or delete account anytime from Settings.
